Quick Pea Soup Recipe

I love meals which are quick and easy whilst being healthy and this pea soup is exactly that. It is super easy and you don’t need to use vegetable stock or fry in oil, you can if you like, but water is just fine. this is Quick Pea Soup recipe, Try this

  • 1.3 L water (roughly)
  • 4 potatoes with skin
  • 200 grams fresh or frozen peas (or canned)
  • 1 onion
  • 1 stalk celery
  • 2 small carrots
  • salt & pepper
  • parsley to taste 

Add water to a pot and cook potatoes, carrots, onion, celery and peas. Season with salt, pepper and parsley (either fresh or dried parsley flakes) and cook until tender.

Turn off stove and let the soup sit for 10 minutes and add to a blender jug. Select low speed and increase to medium and blend for 30-40 seconds or until smooth depending on the type of blender. If you like your soup fairly thick and a bit chewy select slow speed and blend for a short time, or if you like a thinner consistency increase to high speed.
Serve and enjoy!
