Coconut Flour Recipe #1: Coconut Flour Butter CookiesIngredients:
- ¼ lb softened butter
- ¼ cup honey
- 3/4 – 1 cup coconut flour
- 1 tsp baking soda
- 1 egg
- Lemon zest (1/2 lemon)
Preparation:
1. Blend honey and butter together.
2. Add the egg and beat until smooth.
3. Mix the baking soda, coconut flour, and lemon zest in a separate small bowl.
4. Slowly add the flour mixture to the honey and butter until soft.
5. Roll the mixture out on parchment and dust with a little flour.
6. Bake for 6-8 minutes on 350 degrees.
7. Place on a wire rack and let it cool for a few minutes.
Coconut Flour Recipe #2: Double Chocolate Chip Coconut Flour Cookiescoconut-chocolate-cookies
Ingredients:
- ½ cup dark chocolate chips
- 1/3 cup butter or extra virgin coconut oil
- ¼ tsp baking soda
- ¼ cup unsweetened cocoa powder
- 1/8 tsp salt
- 2/3 cup coconut palm sugar
- 1 tsp vanilla extract
- 3 tbsp sifted coconut flour
Preparation :
1. Preheat oven to 350 degrees.
2. Mix coconut oil and coconut palm sugar.
3. Gently add one egg at a time.
4. Add the coconut flour cocoa powder and vanilla. Mix until smooth.
5. Add salt and baking soda. Mix well.
6. Stir in the chocolate chips.
7. Use parchment paper to line your baking sheet. Drop spoonful of the cookie mixture on the sheet, about at least 2 inches apart.
8. Bake in the oven for 12 minutes.
9. Let them cool on a wire rack before eating.
Coconut Flour Recipe #3: Orange Medallions Coconut Flour Cookiescoconut-orange-cookies
Ingredients:
- ½ cup honey
- ½ cup coconut flour
- ½ cup butter
- ½ tsp salt
- ½ tsp vanilla extract
- ½ vanilla bean (this is optional)
- 1 tsp orange zest
- 3 eggs
1. Preheat oven to 350 degrees.
2. Thoroughly mix all ingredients in a bowl until well-combined. Let it sit for 5 minutes to allow the coconut flour to absorb well.
3. Drop cookies in even spaces on greased cookie sheet. Dab your fingers lightly with butter and gently tap the cookies until rounded.
4. Bake at 350 degrees for 8 minutes.
5. Let cool before eating.
Coconut Flour Recipe #4: Coconut Flour Peanut Butter Cookiescoconut-flour
Ingredients:
- ½ cup coconut flour (sifted)
- ½ cup peanuts
- ½ tsp sea salt
- ½ tsp vanilla
- 1 cup peanut butter (preferably natural)
- 1 ½ cup natural sugar
- 4 eggs
1. Mix eggs, peanut butter, vanilla, sugar, and salt. Stir in coconut flour and peanuts. Mixture should be runny.
2. Drop spoonfuls of cookies about 2 inches apart on a greased cookie sheet.
3. Bake for 15 minutes at 375 degrees.
4. Remove from cookie sheet and let cool.
Coconut Flour Recipe #5: Refreshing Lemon Blueberry Coconut Flour Cookiesblueberry-coconut-cookies
Ingredients:
- ½ cup coconut flour
- ½ tsp baking powder
- ¼ cup gluten-free flour
- ¼ tsp salt
- ¼ cup fresh lemon juice
- ¼ cup honey
- 1 egg
- 1 egg white
- 1 tbsp lemon zest
- 2 tbsp Greek yogurt
- Handful of dried blueberries
1. Preheat oven to 325 degrees.
2. Mix dry ingredients in a large bowl.
3. Add eggs, honey, lemon juice, zest, and yogurt. Mix well.
4. Fold in the blueberries.
5. Drop cookies in a greased baking sheet.
6. Bake at 325 degrees for 12-18 minutes until slightly golden.
This is now my go-to cookie recipe for life! I've made so many batches since discovering it and am constantly having to point people in the direction of this recipe because they love them so much.
