Tum Sapi // Balinese Steamed Beef Wrapped in Banana Leaves


This Balinese dish is our new addition to our favorite. So easy and yummy. When I smelled the fragrant from my steamer, I suddenly miss my home country. I'm not a Balinese but Bali is always my favorite place to spend my vacation. Never get bored from this Paradise Island.

If you don't have banana leaves, you can wrap minced meat by using foils or bake them using a baking dish. A real must try dish!

Ingredients:
400 gr minced meat
3 shallots or 1 onion
2 cloves garlic
2 chilies (I used Yellow Peruvian Chilies) - thinly sliced
4 tbsp vegetable oil
1 tsp shrimp paste (I skipped this one)
4 bay leaves
Salt to season
8 banana leaves in 15x15 cm size
8 toothpicks

Base Genep: this spice paste is very important in Balinese cuisine
5 (50 gr) shallots or 1-2 (50 gr) onions
3 (30 gr) cloves garlic
3 red chilies
3 bird eye's chilies
1 cm turmeric
1 cm ginger
1 cm galangal root
1 cm kencur root
3 candlenuts
2 stalks of lemon grass
1 tsp shrimp paste (I skipped this one)
Salt and Pepper to taste



Directions:
Base Genep
Grind all ingredients

Combine well minced meat with Base Genep then make 4 parts in same amount
Grind shallots or onion and garlic cloves
Sauté sliced chilies until fragrant and soft. Set aside. If you use shrimp paste, sauté this paste using the same oil for chilies then set aside
Making tum: Get 2 banana leaves and place 1 bay leaf, 1 part of minced meat, a bit of shallot or onion-garlic-paste, a bit of sautéed sliced chilies, shrimp paste (If you use it) and salt. Wrap it and close it with a toothpick. Do again with the 3 other parts of minced meat. Steam the packages until cook. Serve warm with sliced cucumber and steam rice
