
Yesterday when I picked up some fresh strawberries and raspberries at home of our concierge, I saw that she also had fresh red beets. They looked so tempting, so I bought six roots of them. My hubby loves them. When we used to live in Berlin, we loved to eat red beet pickles. Hhmm lecker. I browsed around the recipes of cream of beet soup. And I found one simple and sounded so delicious.

Ingredients:
1 l chicken/meat/vegetarian broth (I used my home made chicken broth)
500 gr red beet - peeled (be careful: RED all over)
400 gr potatoes - peeled
2 tbsp cream
1 pinch of grind caraway
Tabasco
Salt
Fresh grind black pepper
Almond for garnish

Directions:
Cook the red beet and the potatoes in 1 l broth for about 35-40 minutes
Add salt, tabasco, pepper and caraway. Cook again for about 5 minutes
Using an electric hand mixer, puree the red beet and the potatoes
Add the cream, combine well. Garnish with almond before serving
